I'm seeing previous year acceptance posts in the archive but I'm a little confused by the GPA. Some people reported GPAs above 90% that was according to the posters was confirmed by UBC. I thought that UBC caps the GPA at 90%. Could someone explain what I'm missing here?

I think the 90% cap thing is in reference to how they convert GPAs from different scales. For example, on the 12 point scale a 12/12 is converted by UBC to be 90%.

I would assume that someone with above 90% attended a school where grades are given on a percentage scale already. They don't do any sort of conversion on your grades if your GPA is already a percentage.
