I'm not sure how it was dealt with for partners, but for associates and articling students we just tracked time working on the course like a client file and it was treated the same as work on client files for reviews and bonuses. One year I did a bunch of prep work for a partner who was teaching a law school seminar and the 50-60 hours I spent on that counted towards my target.
