Anyone on here at Ryerson law? What GPA and LSAT score did you have to get into the program? 
on their website it says there’s no minimum requirement for either so I would like to have an idea of what their expectations are like. And do you have an idea of how much importance they place on the video interview component?

If the average of my B20 courses is 80% and I score a 160+ on the LSAT, what are my chances of getting into Ontario schools? I know Ryerson looks at B20, do any other universities look at that as well?

If you tell us only your B20 and your projected LSAT, then we can only tell you about Ryerson.

Why don't you start a "chances" thread where you tell us your cGPA, your B2 (Best 2 years' GPA) and your actual B20.

I take it that you have not written an official LSAT. Have you taken a practice test under timed conditions?

You might have to do a bit of work so you can give us the most accurate information. We can then give you the most accurate possible feedback. You should probably plug your grades into an OLSAS calculator so you can give us your calculated OLSAS GPA.
