Do I need to use American spellings when applying for US law schools?

Words like honour, offence, centre, etc. Should I use American spellings? Or is it okay to stick with the way I like as long as I keep it consistent throughout the entire application?

The most important thing when writing is to write for your audience. That means using terms and spelling conventions they are likely to use rather than ones you personally prefer.

While I don’t think it would be the reason a school potentially rejects you, I would use the American spelling. 

I have a hard time doing this in reverse currently and just update my auto-correct settings in word or my browser to Canadian English to catch the typos.

I would write in American English if you can help it but it honestly shouldn't matter. I wrote all of my apps in British English and got accepted to a bunch of T14s last cycle, you'll be fine either way.
