Wanting to finish my undergrad/reapplying to a school that accepted you

I am wondering if those who are in law school think it is possible to take 2 undergrad classes while also in law school. I know for the U of S, it doesn't matter if you finish your undergrad, but I personally want to within 5 years. 

I'm also wondering if one were to reject an accepted offer, would that hinder your chances of reapplying to the same school in the next cycle? Has anyone ever had experience with that?
