Cancelling LSAT Score

If you cancel the score, does it display to admissions as 'cancelled score/score hidden' or as if it entirely didn't happen?

Yes. 

Edit: 'Yes' to the first part of your question. Cancellations show up on your profile.

It will appear as "candidate cancel" to adcoms.

And to answer the secondary, underlying question you probably have: yes you can get in with a cancelled score on your record (which was the case for me and so many others). Schs care mainly about your highest score to date
