Why do people wait till September?

Why do people wait till September to work after their call to bar? Hypothetically if I get called in end of June, can I start working in July as a lawyer?

Of course you can.  People don't necessarily choose to wait.  But large Bay Street firms are typically a bit quieter during the summer and have lots of other things going on (summer student programs, partners on vacation, etc.), such that they don't really want or need their new associates to return until September.  Also, this is a really nice final break / vacation opportunity for those lucky individuals before they start the Bay Street grind.  But this has no particular application to anyone else called to the Bar in June.
